One could say that Es Roquissar olive oil is the classic Tramuntana oil. Made from the olives that grow in the highest parts of the estate, it comes from those formidable specimens of trees which, grafted hundreds of years ago, flourish in the least expected places, not only surviving but producing, year after year, fine Mallorcan olives.
These are the trees that grow on the steepest slopes and the narrowest dry stone terraces where only a unique traditional form of agriculture is possible and only the flocks of Mallorcan sheep can reach to do their job, eating the wild olive shoots which would kill the grafted trees over time if left to grow. These trees are cropped later than others on flatter lands down in the valley, and that is why the oil is smoother with a slightly higher acidity. It is the ideal oil for the typical Mallorcan pa amb oli, bread or toast with tomato, oil and cold meats or cheese.
It has medium to strong green fruitiness. It has touches of almond, apple and banana with flashes of green grass and olive leaf. In mouth it is balanced with a slight bitterness and medium spiciness.
